Every year, Americans celebrate Thanksgiving Day on the fourth Thursday of November. It’s a chance to recognize the things in life that we often take for granted. A chance to give thanks for our family, our friends, our health and food!

This year, I plan to give thanks for turkey, mashed potatoes, stuffing, gravy, cranberries, green bean casserole and pie! Every year we cap off our feast with pie, but which one is your favorite? Here are the 8 most popular pies for your Thanksgiving celebration according to a survey conducted by NPR.

#8. Chess Pie

According to PorterBriggs, this rich and smooth custard based pie is believed to have its roots in 17th century England. It was eventually brought to America and popularized through the southern states where it is now considered a staple of southern cuisine.

While there are many variations, Megan Wells of Meg is Well explains her Lemon Chess Pie as, “a perfect tartly sweet Southern creation of eggs, sugar, butter, and a little bit of flour and cornmeal that tantalizes the taste buds with it’s unique flavor and texture. It’s a pretty easy and equipment free pie: just a whisk is needed to pull it all together. Baking times tend to vary, but if the middle is set and top is nice and crusty, then you’re good to go.”

Did you know that before there was pumpkin pie there was “Pie in a Pumpkin?” According to PBS, the original pilgrims of Plymouth would have baked a custard filled pumpkin to celebrate the early days of Thanksgiving.

To help you bake the perfect (modern style) pumpkin pie, Jenn Segal of Once Upon a Chef offers solutions to 3 common problems:

Problem 1:  The pie shrinks during baking.

Solution:  Add a tiny bit of baking powder to the dough, which helps the crust expand into the pan rather than slip down the sides.

Problem 2:  The dough becomes soggy from the wet filling.

Solution:  Blind bake the crust until it is completely cooked.

Problem 3:  Unsightly cracks in the pie filling.

Solution:  Add a little flour to the filling and replace some of the whole eggs in the recipe with egg yolks to help stabilize the pie.

Before rhubarb made an appearance in the first strawberry rhubarb pie, The Kitchen Project points out it was used as a medicine to treat inflammation in Rome as far back as the 1st century.

The sweet strawberry and tangy rhubarb flavors blend perfectly, but their high water content can lead to a sloppy mess. Lily of Little Sweet Baker says, “to avoid this it is important to add enough flour to thicken the filling so it holds together when you cut into the pie.”

According to Rose Levy Beranbaum of The Baking Bible, “the most important thing about baking an apple pie is to keep the bottom crust from getting soggy.”

When making her apple pie recipe, Rose suggests macerating the sliced apples with the sugar mixture long enough to release most of the liquid in the apple. Then, separate the sugary liquid and heat it in a sauce pan or in the microwave until it is almost caramelized before returning it to the apples. “This will create a delicious flavor and keep the bottom crust crunchy,” she explains. Finally, she suggests baking the pie on a preheated oven stone for a perfectly dry crust.
